- 6 oz Cobia Filet
- 2/3 cup Rice
Honey Balsamic Glaze
- 2 tbsp Fruit Flavored Balsamic Vinegar
- 1 tbsp Honey (I use Wholesome Yum Keto)
- 1/2 tsp Dijon Mustard (trust me!)
- Pinch of salt
Apple Cranberry Salsa
- 1/2 Granny Smith Apple
- 2 tbsp Dried Cranberries
- 2 tbsp Red Onion - diced
- 1 tsp Lime Juice
- 1 tsp Honey (I use Wholesome Yum Keto)
- 1/4 tsp Apple Cider Vinegar
- Pinch of salt
Rinse your cobia with cold water and pat dry
If you are making rice in the rice cooker, start that now
Whisk your glaze ingredients and set aside
Make your salsa ingredients in a small bowl and set aside
Air fry your fish at 400 for 15 minutes (depending on your air fryer). Glaze when you first put it in, when you flip half way through and again when you have two minutes left.
While your fish is cooking, heat up your rice in the microwave.
When everything is done, assemble your bowl starting with your rice, fish and salsa.
