Apple Crumble Pie Protein Blended Baked Oats

These cozy protein baked oats are packed with warm cinnamon-spiced apples and topped with a simple oat crumble. Baked into four individual ramekins, they’re an easy, delicious fall breakfast that’s perfect for meal prep.

Ingredients
  

Apple Pie Filling

  • 2 medium Apples - diced
  • 2 tsp Cinnamon
  • 4 tsp Brown Sugar Substitute (I use Swerve)
  • 2 tbsp Water
  • Pinch of Salt

Blended Oat Batter

  • 2 cups Old Fashioned Oats
  • 2 scoops ISO100 Gourmet Vanilla Whey Protein Powder
  • 1/2 cup Unsweetened Applesauce
  • 1 cup 2% Fairlife Milk
  • 4 large Eggs
  • 2 tsp Baking Powder
  • 2 tsp Vanilla Extract
  • 3 tsp Cinnamon
  • 1/2 tsp Nutmeg
  • 1/4 tsp Salt
  • 2 tbsp Sugar Substitute (I used Swerve)
  • 8 grams Sugar-Free Vanilla Pudding Mix (I use Simply Delish)

Crumble Topping

  • 1/4 cup Old Fashioned Oats
  • 1 tbsp Brown Sugar Substitute (I use Swerve)
  • 1 tsp Cinnamon
  • 1 tbsp Sugar-Free Maple Syrup

Instructions
 

  • Preheat oven to 350
  • Over medium heat on the stove, heat up your diced apples, cinnamon, brown sugar, water and salt. Cook for 4-6 minutes then set aside.
  • Blend all of your oat batter in your blender until smooth.
  • Make your crumble and set aside.
  • Spray your ramekins and place on your cookie sheet.
  • Pour half of your batter into each ramekin.
  • Divide 2/3 of your apple filling into each ramekin.
  • Pour the rest of your batter into each ramekin.
  • Top with remaining apple filling and then your crumble.
  • Bake for 25 minutes.
