BBQ Pulled Pork and Bacon Pizza

HOLY HOT MESS! We have a 3 day weekend so I am kicking it off in celebration style with this delicious and messy bbq pizza!
Do you enjoy different kinds of pizza or do you prefer the norm of pepperoni, or cheese? I like to get creative with my pizza's and crunchwrap's as most of you know. It is what keeps life exciting and never boring!

Equipment

  • 1 Pressure Cooker
  • 1 Fry Pan
  • 1 Cookie Sheet
  • 1 Oven

Ingredients
  

  • 1 Cut da Carb Flatbread
  • 1 oz Lite Shredded Mozzarella (Trader Joes)
  • 1/8 cup Lite 3 Cheese Blend Shredded
  • 4 oz Pork Shoulder - shredded
  • 2 tbsp Bacon Pieces/Bits (I love Kirkland brand)
  • 3 tbsp GHughes BBQ Sauce
  • 1/2 cup Chopped Sweet Onion
  • 1/4 cup Chopped Red Onion
  • 1 tbsp Chopped Fresh Cilantro

Instructions
 

  • Put your pork shoulder (I cook 3 whole ones for fam) in the pressure cooker and pour a full beer of your choice over it all. Press the meat/stew button and let cook until it is done. Usually 2 hours.
  • The above is ONLY if you are not using pre-cooked.
  • While your pork cooks, caramelize your chopped onions in a small fry pan. I fry them on a high heat, once start to brown add a little bit of water, stir and repeat that process until it is all golden brown.
  • If you did cook your pork, once done take your portion out, shred and set aside to cool down.
  • Preheat the oven at 375 degrees when your meat is almost done.
  • Place your flatbread on a lightly sprayed cookie sheet then spray the top of your flatbread. I use Pam cooking spray.
  • Once your oven is preheated, bake your flatbread at 375 for 2 minutes, flip and bake another 1 minute.
  • Take out your flatbread and spread a light layer of bbq sauce.
  • Sprinkle your cheeses, shredded pork and caramelized onions.
  • Bake for another 11 minutes. Watch for your desired browning.
  • When done, take out and top with red onions, cilantro and drizzle of BBQ sauce.
