Chicken Enchilada Crunch Bowls
All the bold, cheesy, saucy flavors of chicken enchiladas in an easy meal-prep bowl. Juicy air-fried chicken, cilantro-lime rice, corn, tomatoes, Mexican cheese and crunchy tortilla chips come together with enchilada sauce and a creamy guacamole Greek yogurt drizzle for a high-protein meal that’s seriously satisfying.

- 1 lb Chicken Breasts
- 1 packet Spanglish Enchilada Seasoning
- 1 tbsp Light Olive Oil
- 2 cups Cilantro-Lime Rice
- 2 cups Roasted Corn
- 1 cup Tomatoes - diced
- 8 tbsp Enchilada Sauce
- 1/2 cup Light Shredded Mexican Blend Cheese
Avocado Crema
- 1/2 cup 0% Greek Yogurt
- 1/4 cup Crushed Avocado
- 1 tbsp Lime Juice
Pat your chicken breasts dry
Divide up your olive oil among your four chicken breasts and massage in.
Season the chicken, front and back.
Air fry at 400 for 25 minutes; flipping a few times through.
Cook your rice, whether it is in your rice cooker or microwave.
Fry pan your roasted corn. I used frozen Trader Joes. If using canned corn, just drain and set aside.
Once your chicken is cooked, set aside to cook down before slicing.
Assemble your bowls - rice, corn, tomatoes then top with shredded cheese.
Once your chicken is sliced, place on top of your bowls or cut into bite size pieces and place on top.
You can either pour your enchilada sauce on top of your chicken or keep on the side. After my photos, I cut up my chicken into bite size pieces and poured the enchilada sauce on top!
Once I reheat my bowl, I will put the crema on top then mix. You can eat it any way you wish!
