Crispy BBQ Peanut Chicken Noodle Bowls

These Crispy BBQ Peanut Chicken Noodle Bowls combine golden, crispy chicken with chewy noodles tossed in a creamy homemade BBQ peanut sauce. Sweet, smoky, savory and slightly spicy, they're an easy high-protein meal prep that's anything but boring!

Equipment

  • 1 Air Fryer
  • 1 Large Pasta Pan
  • 1 Medium Sauce Pan
  • 1 Large Strainer
  • 4 Glass Meal Prep Containers

Ingredients
  

  • 1-1/2 lbs Just Bare Lightly Breaded Chicken Bites
  • 4 Trader Joes Squiggly Noodles (no packets included)
  • 3 Green Onions Choppes
  • 1/8 cup Crushed Peanuts

BBQ Peanut Sauce

  • 1/2 cup Sugar Free Ketchup
  • 3 tbsp Worcestershire Sauce
  • 2 tbsp Apple Cider Vinegar
  • 4 tbsp Swerve Brown Sugar Alternative
  • 1/4 cup PBfit
  • 1/4 cup Creamy Peanut Butter
  • 1 tbsp Soy Sauce
  • 1 tbsp Sugar Free Maple Syrup
  • 2 tsp Chili Garlic Oil
  • 1 tsp Sesame Oil
  • 1 tsp Minced Ginger
  • 2/3 cup Warm Water

Instructions
 

  • Air Fry your chicken at 400 for 30 minutes - moving the pieces around multiple times throughout cooking
  • Boil Noodles without packets for 4 minutes then strain. If they get sticky, use a little olive oil and mix in. (it works!)
  • Assemble your bowls with cabbage and carrots
  • Whisk your sauce - bring to a very quick boil and then simmer
  • When chicken is done, put into a large mixing bowl and use half of the sauce. Mix really well.
  • Pour your noodles into the sauce pan and mix well.
  • Add your noodles and chicken to your bowls, top with sweet chili oil, green onions and crushed peanuts!
