Honey Mustard Chicken Salad

I love big salads as you know and now that it is summer time I am ready to really dive in and make all sorts of delicious fresh and crisp ones!
This was a huge success because of the honey mustard dressing I made that is ONLY 2 points! It is my favorite dressing and it's hard to find a good lower point store-bought one. I am forever changed!

Equipment

  • 1 Air Fryer

Ingredients
  

  • 4 oz Tyson Rotisserie Chicken Breast (use any chicken breast)
  • 1 med Apple (I use Honeycrisp)
  • 1/8 cup Sliced Almonds
  • 2 oz Fat Free Crumbled Feta
  • 1-1/8 oz Reduced Sugar Dried Cranberries
  • 2 tbsp Diced Red Onion
  • 3 cups Chopped Romaine Lettuce

Light Honey Mustard Dressing (serves 4)

  • 1/2 cup Fage 0% Plain Greek Yogurt
  • 5 tbsp Dijon Mustard
  • 5 tbsp Wholesum Yum Keto Honey Substitute
  • 2 tbsp Apple Cider Vinegar
  • 2 tbsp Lemon Juice
  • 1 tbsp EVOO
  • 1/2 tsp Black Pepper

Instructions
 

  • Whisk your honey mustard ingredients together then place in fridge
  • Air fry chicken at 400 for 10 minutes
  • Cut up your apple into bite size pieces
  • Dice your red onion
  • Weigh out all ingredients and set aside
  • Once your chicken is cooked, cut into bite size pieces
  • Add your lettuce to a big bowl and then everything else
  • Drizzle on your salad dressing or use a little bowl to dip and ENJOY!
