These Lemon Pepper Butter Chicken Meal Prep Bowls are juicy, flavorful, and packed with protein while staying WW-friendly. Tender chicken is coated in a bright, buttery lemon pepper sauce that keeps every bite fresh and satisfying all week long. It’s an easy, high-protein meal prep that tastes like takeout but fits perfectly into a balanced lifestyle.

Equipment

  • 1 Air Fryer
  • 1 Rice Cooker
  • 1 Small Saucepan
  • 1 Large Saucepan
  • 1 Large Mixing Bowl
  • 4 Glass Lunch Containers

Ingredients
  

  • 1.5 lbs Chicken Breast
  • 2 tbsp Lemon Pepper Seasoning (I used Mrs Dash)
  • 2 cups Jasmine Rice
  • 1-2/3 cup Broccoli

Lemon Pepper Butter Sauce

  • 2 tbsp Light Butter (I used Light I Can't Believe It's Not Butter)
  • 1/2 cup Fat Free Chicken Broth
  • 3 tsp Lemon Juice
  • 1-1/2 tsp Lemon Pepper Seasoning
  • 1 tsp Onion Powder

Instructions
 

  • Cut chicken into chunks and season well with your lemon pepper seasoning
  • Air fry chicken at 400 degrees for 25 minutes, flipping multiple times throughout the cooking process.
  • While your chicken is cooking, cook your rice.
  • Rinse your broccoli. When your chicken and rice is almost done, boil or steam your broccoli. I boil and only for a quick minute!
  • When your chicken is done, place in a clean mixing bowl.
  • Measure out your rice into each meal prep container.
  • Heat up your sauce. Boil so the butter melts and then pour over your chicken. Mix until all are coated.
  • Add your chicken to each of your meal prep bowls.
  • Add your broccoli to each of your bowls.
  • Add a slice of lemon and a dash of parsley!
  • If you want to add a bit of sweetness, drizzle honey over each bowl!
