These Sticky Hot Honey Chicken Meal Prep Bowls are a high-protein, flavor-packed option built with juicy chicken breast, basmati rice, roasted corn, and tangy pickles for crunch and balance. The sweet heat from the hot honey glaze paired with creamy sriracha mayo makes every bite bold and satisfying, while still keeping the meal prep-friendly and portion-conscious. It’s the perfect mix of comfort and control without sacrificing flavor.

Equipment

  • 1 Air Fryer
  • 1 Rice Cooker
  • 1 Fry Pan or Microwave (for corn)
  • 2 Mixing bowls
  • 4 Lunch Meal Containers
  • 4 Condiment Containers

Ingredients
  

  • 1.25 lbs Chicken Breast
  • 8 tsp Pollo Asado Seasoning
  • 2 cups Basmati Rice
  • 1-1/2 cups Roasted Corn
  • 1/2 cup ChocZero Hot Honey
  • 1 tbsp Mikes Hot Honey
  • 4 tbsp Sriracha Mayo (optional but so yummy)

Instructions
 

  • Cut your chicken into bite size pieces then place in a large mixing bowl.
  • Mix your seasoning with the chicken until all pieces are coated.
  • Air fry chicken at 400 for 25 minutes. Flipping and moving chicken around several times throughout the cooking time.
  • Heat up your rice.
  • Heat up your corn. I use the Trader Joes frozen roasted corn which I pan fry to heat up.
  • Once your rice is done, place in the middle of each of your meal containers.
  • Measure out your corn and place next to the rice in each container then add your pickles.
  • Once your chicken is done, place in a clean mixing bowl.
  • Mix your two honeys and then pour over your chicken and mix really well.
  • Add your chicken to your meal prep containers. Drizzle a little more honey and add lime wedge, green onions and sesame seeds.
  • Add Siracha mayo to your condiment containers and place in each meal prep container.
  • When reheating, remove pickles and sriracha. Add them back in and mix it all up!

Notes

Total of 13 WW points in each meal prep bowl.
Swap out the pickles with dill and save 4 ww points
Remove the sriracha mayo and save 3 points
