Equipment

  • 1 Air Fryer
  • 1 Small Sauce Pan
  • 1 Rice Cooker
  • 2 Large Mixing Bowls
  • 1 Sharp Knife
  • 1 Cutting Board
  • 4 Lunch Prep Containers
  • 4 Condiment Containers

Ingredients

  • 1-1/2 lbs Chicken Breast - Diced
  • 2 cups Basmati Rice (any kind will be good)
  • 4 cups Tri-Color Shredded Cabbage
  • 2 cups Pineapple Tidbits

Mango Habanero Teriyaki Sauce

  • 1-1/2 cups GHughes Mango Habanero Wing Sauce
  • 1/4 cup Low Sodium Soy Sauce
  • 2 tbsp Seasoned Rice Vinegar
  • 1 tsp Garlic Powder
  • 1 tsp Ground Ginger

Instructions

  • Air fry your chicken at 400 for 25 minutes or until fully cooked (I used chicken breast strips)
  • Cook your rice while your chicken is cooking
  • Mix your pineapple and shredded cabbage and set aside
  • Whisk your sauce ingredients, bring to a quick boil then simmer
  • Once your chicken is done, cut into bite size pieces
  • Add 2 tbsp of your teriyaki sauce to the cabbage and pineapple mixture (optional but delicious)
  • Add remainder of your sauce to the chicken in a big mixing bowl and mix well
  • Divide everything into your four meal prep containers
  • I love yum yum sauce with this so I put a little in each condiment container to add after heated up!
