  • 1 Oven
  • 1 Large Fry Pan
  • 1 Cookie Sheet
  • 1 Cutting Board
  • 1 Sharp Knife
  • 1 Medium Bowl
  • 4 Glass Lunch Meal Containers

Ingredients
  

  • 2 Medium Sweet Potatoes (4 cups diced)
  • 1.5 lbs 96/4% Ground Beef
  • 4 cups Low Fat Cottage Cheese
  • 2 cups Diced Avocado
  • 1 tbsp Choc Zero Hot Honey
  • 2 tsp Cumin
  • 2 tsp Paprika
  • Olive Oil Spray
  • 1 tbsp Taco Seasoning (I use Dak's)

Instructions
 

  • Preheat your over to 425
  • Dice up your sweet potatoes and lay out in a single layer on a large cookie sheet
  • Spray potatoes with olive oil spray and season with cumin and paprika
  • Cook for 25 minutes, flipping half way
  • While your potatoes cook, fry up your ground beef seasoned with taco seasoning
  • When your meat is done, set aside in a bowl or leave in the pan
  • Lay out your meal prep containers
  • Dice up fresh avocados or use Wholly packs which I did. Put lime juice on your avocado to keep fresher!
  • Once your potatoes are done, portion everything out into your bowls and drizzle with hot honey!
