Air Fryer Garlic Parmesan Chicken Meal Prep Bowls

If you’re looking for a bold, high-protein meal prep that still fits your goals, these Air Fryer Garlic Parmesan Chicken Bowls are it. Juicy diced chicken breast is seasoned with Spanglish Pollo Asado seasoning and air fried until golden, then served over fluffy rice with crisp cabbage slaw and a creamy garlic parmesan sauce. It’s simple, satisfying, and perfect for easy weekly meal prep.

Equipment

  • 1 Air Fryer
  • 1 Rice Cooker
  • 2 Mixing bowls
  • 1 Small Mixing Bowl (sauce)
  • 1 Fry Pan
  • 4 Meal Prep Containers

Ingredients
  

  • 1-1/2 lbs Chicken Breast (diced)
  • 2 cups White Rice (cooked)
  • 1 tbsp Spanglish Pollo Asado Seasoning or 1/2 tsp of each: onion powder, garlic powder, pepper, chili powder
  • 1 tbsp Parsley Flakes

Garlic Parmesan Sauce

  • 1/2 cup Light Butter Spread (I used ICBNB)
  • 1/2 cup Grated Parmesan Cheese
  • 4 tbsp Minced Garlic
  • 1 bunch Fresh Parsley

Instructions
 

  • Pat dry your chicken breasts and cut into bite spice pieces.
  • Put into a large mixing bowl and season with the Spanglish and parsley flakes.
  • Air fry at 400 in single layer (I did two separate cooking times to fit all the chicken). Cook at 25 minutes flipping once; depending on your air fryer.
  • Cook your rice
  • Pan fry your cabbage just until it slightly softens. I used Pam spray.
  • Make your garlic parmesan sauce. I melted the butter but if you don't, it will melt with your warm chicken. I found it easier melting it.
  • When your chicken is cooked, mix the sauce until all pieces are coated.
  • Assemble your containers and ENJOY!
