These Air Fryer Garlic Parmesan Chicken Bowls start with tender diced chicken breast seasoned generously with Spanglish Pollo Asado seasoning and fresh parsley, then air fried until golden, juicy, and full of bold flavor. The seasoning gives it that slightly smoky, citrusy, savory kick that usually reminds you of street-style grilled chicken or even wings—but instead of serving it as finger food, I turned it into a hearty, satisfying rice bowl that works perfectly for meal prep.

What makes this dish really shine is how versatile it is. The chicken becomes the star of a balanced bowl layered over fluffy rice and paired with fresh cabbage slaw for crunch. It’s the kind of meal that feels comforting and indulgent, but still clean and structured enough to fit into your weekly routine. Every bite hits that sweet spot between bold seasoning, creamy garlic parmesan sauce, and fresh, crisp veggies.

One of the best parts about this recipe is that it uses simple, lean chicken breast as the base. Chicken breast is a smart protein choice for meal prep because it’s high in protein, low in fat, and incredibly versatile when it comes to seasoning and sauces. Whether you’re trying to stay on track with WW goals, increase protein intake, or just eat a little lighter during the week, this is the kind of foundation that makes healthy eating feel effortless.

Equipment

  • 1 Air Fryer
  • 1 Rice Cooker
  • 2 Mixing bowls
  • 1 Small Mixing Bowl (sauce)
  • 1 Fry Pan
  • 4 Meal Prep Containers

Ingredients

  • 1-1/2 lbs Chicken Breast (diced)
  • 2 cups White Rice (cooked)
  • 1 tbsp Spanglish Pollo Asado Seasoning or 1/2 tsp of each: onion powder, garlic powder, pepper, chili powder
  • 1 tbsp Parsley Flakes

Garlic Parmesan Sauce

  • 1/2 cup Light Butter Spread (I used ICBNB)
  • 1/2 cup Grated Parmesan Cheese
  • 4 tbsp Minced Garlic
  • 1 bunch Fresh Parsley

Instructions

  • Pat dry your chicken breasts and cut into bite spice pieces.
  • Put into a large mixing bowl and season with the Spanglish and parsley flakes.
  • Air fry at 400 in single layer (I did two separate cooking times to fit all the chicken). Cook at 25 minutes flipping once; depending on your air fryer.
  • Cook your rice
  • Pan fry your cabbage just until it slightly softens. I used Pam spray.
  • Make your garlic parmesan sauce. I melted the butter but if you don't, it will melt with your warm chicken. I found it easier melting it.
  • When your chicken is cooked, mix the sauce until all pieces are coated.
  • Assemble your containers and ENJOY!
