  • 1 Rice Cooker
  • 2 Medium Mixing Bowls
  • 4 Lunch Meal Prep Containers

Ingredients
  

  • 1.25 lbs Chicken Thighs - diced
  • 6 tbsp Al Pastor Seasoning (you can use less/more)
  • 2 cups Basmati Rice
  • 1/4 cup Cilantro - chopped
  • 1 tbsp Lime Juice
  • 2-2/3 cup Roasted Corn
  • 1 tbsp 0% Plain Greek Yogurt
  • 1 tbsp Light Mayonnaise
  • 1 tbsp Lime Juice
  • 1 small Jalapeño Pepper - diced
  • 2 tbsp Cilantro - chopped
  • 1/2 tsp Chili Powder
  • 1/4 tsp Garlic Powder

Instructions
 

  • Dice up your chicken thighs and mix in your al pastor seasoning until all pieces are covered.
  • Air fry at 400 for 25-35 minutes depending on your air fryer. Make sure to flip your pieces around a couple times during cooking.
  • Cook your rice.
  • Dice and chop your veggies then set aside
  • Put your corn in a mixing bowl and mix in all ingredients then set aside.
  • Once your rice is done, put into a. mixing bowl and stir in the cilantro, lime juice and salt if you wish.
  • Assemble your bowls and ENJOY!
