- 1.25 lbs Chicken Thighs - diced
- 6 tbsp Al Pastor Seasoning (you can use less/more)
- 2 cups Basmati Rice
- 1/4 cup Cilantro - chopped
- 1 tbsp Lime Juice
- 2-2/3 cup Roasted Corn
- 1 tbsp 0% Plain Greek Yogurt
- 1 tbsp Light Mayonnaise
- 1 tbsp Lime Juice
- 1 small Jalapeño Pepper - diced
- 2 tbsp Cilantro - chopped
- 1/2 tsp Chili Powder
- 1/4 tsp Garlic Powder
Dice up your chicken thighs and mix in your al pastor seasoning until all pieces are covered.
Air fry at 400 for 25-35 minutes depending on your air fryer. Make sure to flip your pieces around a couple times during cooking.
Cook your rice.
Dice and chop your veggies then set aside
Put your corn in a mixing bowl and mix in all ingredients then set aside.
Once your rice is done, put into a. mixing bowl and stir in the cilantro, lime juice and salt if you wish.
Assemble your bowls and ENJOY!
