Equipment
- 1 Air Fryer
- 1 Rice Cooker
- 2 Medium Mixing Bowls
- 4 Lunch Meal Prep Containers
Ingredients
- 1.25 lbs Chicken Thighs – diced
- 6 tbsp Al Pastor Seasoning (you can use less/more)
- 2 cups Basmati Rice
- 1/4 cup Cilantro – chopped
- 1 tbsp Lime Juice
- 2-2/3 cup Roasted Corn
- 1 tbsp 0% Plain Greek Yogurt
- 1 tbsp Light Mayonnaise
- 1 tbsp Lime Juice
- 1 small Jalapeño Pepper – diced
- 2 tbsp Cilantro – chopped
- 1/2 tsp Chili Powder
- 1/4 tsp Garlic Powder
Instructions
- Dice up your chicken thighs and mix in your al pastor seasoning until all pieces are covered.
- Air fry at 400 for 25-35 minutes depending on your air fryer. Make sure to flip your pieces around a couple times during cooking.
- Cook your rice.
- Dice and chop your veggies then set aside
- Put your corn in a mixing bowl and mix in all ingredients then set aside.
- Once your rice is done, put into a. mixing bowl and stir in the cilantro, lime juice and salt if you wish.
- Assemble your bowls and ENJOY!
