Equipment

  • 1 Air Fryer
  • 1 Rice/Pressure Cooker
  • 1 Small Sauce Pan

Ingredients
  

  • 6 oz Salmon
  • 1 tsp OSMO Coastal Catch Seasoning
  • 1 tsp Lime Juice
  • 1/2 cup White Rice
  • 1 cup Arugula

Blackberry Glaze

  • 3 tbsp Sugar Free Blackberry Preserves
  • 1 tbsp Wholesome Yum Keto Honey
  • 1 tsp Lime Juice

Blackberry Mojito Salsa

  • 1/2 cup Fresh Blackberries
  • 2 tbsp Chopped Yellow Bell Pepper
  • 1 tbsp Red Onion Diced
  • 1 tsp Chopped Mint Leaves
  • 1/2 tbsp Chopped Cilantro
  • 1 tsp Lime Juice
  • 1 tsp Wholesome Yum Keto Honey

Instructions
 

  • Start cooking your rice.
  • Chop/dice up your salsa, mix and let sit. This will add more flavor the longer it settles.
  • Pat dry your salmon and rub seasoning and lime juice
  • Make your glaze in a sauce pan by bringing to a quick boil while whisking then turning it down to low and let sit.
  • Brush your salmon with some of the glaze
  • Air Fry at 400 for 10 minutes
  • Once your salmon is cooked and rice is done, arrange your bowl with the arugula, then rice and salmon.
  • Add more of your glaze on top of your salmon.
  • Top with your salsa and ENJOY!
