Blackened Chicken Delicata Squash Burrito Bowl

I'm a huge delicata squash fan! It's my favorite squash of all time. I love the Fall season with all the delicious produce!
When I saw delicata squash at Trader Joe's I did a happy dance. I'm excited to go to our local farm stand to get a whole box!
This burrito bowl is DELISH and I will definitely be eating it on repeat.1

Equipment

  • 1 Air Fryer
  • 1 Small Fry Pan

Ingredients
  

  • 3 cups Delicata Squash
  • 6 oz Blackened Chicken
  • 2/3 cup Roasted Corn (I use either Trader Joes or Del Monte)
  • 1/4 cup Caramelized Onions
  • 2 Diced Sweet Mini Red Peppers
  • 1 tsp Daks Blackened Seasoning
  • 1/2 tbsp Fresh Chopped Cilantro
  • 2 tbsp Medium Salsa Con Queso (I use Tostitos)
  • 2 tbsp Light Sour Cream
  • 1/3 oz Cotija Cheese

Instructions
 

  • Slice the end of your delicata then down the middle long ways. Scoop out the seeds then cut into fry shapes
  • Spray or drizzle EVOO and season with blackened seasoning
  • Air Fry at 400 for 25 minutes
  • Add chicken to the air fryer when you have 10 minutes left. Shake squash first!
  • Caramelize your onions in a fry pan then add your corn to heat up once the onions are done
  • Dice up your red peppers and cilantro
  • Once your chicken is cooked, cut into bite size pieces
  • Assemble your bowl with all your goodies, drizzle your cheese on top, add sour cream, cilantro and cotija cheese
