Let's TACO 'bout how amazing this bowl looks my friends! It's Taco Tuesday so I made this big delicious taco bowl using blackened chicken. I grabbed stuff I had in the fridge which always is a great decision!
Take your flatbread and cut 4 circles tracing small pyrex bowl
Fry the flatbread rounds in light oiled fry pan to crisp, flipping evenly
Caramelize your diced onions in a small fry pan. I fry them on a high heat, once start to brown add a little bit of water, stir and repeat that process until it is all golden brown.
Chop up your tomatoes and cilantro, set aside
Heat up the roasted corn (I use fry pan)
When chicken is done, cut into bite size pieces
Heat up your rice in microwave or any way you wish
Add all the goodies to your bowl, top with sour cream and lime wedges
