Blackened Chicken Taco Bowl

I love filling bowls with all sorts of delicious food! Taco Tuesday’s are usually for anything that has to do with tacos. This turned out delicious!

Sometimes the best meals are the ones you don’t plan and end up cleaning out your fridge. That is exactly what I did here with this. Best decision for sure!


Blackened Chicken Taco Bowl

It's Taco Tuesday so I made this big delicious taco bowl using blackened chicken. I grabbed stuff I had in the fridge which always is a great decision!

Equipment

  • 1 Air Fryer
  • 1 Fry Pan
  • 1 Extra Small Pyrex Glass Bowl
  • 1 Large Bowl

Ingredients
  

  • 7 oz Blackened Chicken
  • 2/3 cup White Rice
  • 2/3 cup Roasted Corn
  • 1 Cut da Carb
  • 1/3 cup Diced Tomato
  • 2 tbsp Chopped Cilantro
  • 1/3 cup Diced Onion
  • 3/4 cup Shredded Lettuce
  • 1/8 cup Lite 3 Cheese Blend Shredded
  • 2 tbsp Light Sour Cream

Instructions
 

  • Air Fry chicken at 400 for 9 minutes
  • Take your flatbread and cut 4 circles tracing small pyrex bowl
  • Fry the flatbread rounds in light oiled fry pan to crisp, flipping evenly
  • Caramelize your diced onions in a small fry pan. I fry them on a high heat, once start to brown add a little bit of water, stir and repeat that process until it is all golden brown.
  • Chop up your tomatoes and cilantro, set aside
  • Heat up the roasted corn (I use fry pan)
  • When chicken is done, cut into bite size pieces
  • Heat up your rice in microwave or any way you wish
  • Add all the goodies to your bowl, top with sour cream and lime wedges
