Blueberry Peach Baked Oats

This will be the 2nd week in a row that I have meal prepped my breakfast. We bought a new electric car so I have been driving that to/from work which has been amazing! So to get out the door quicker, it was better for me to just grab both my breakfast and lunch each morning before heading out the door to the office.
This delicious recipe comes from @wholefamily.health on Instagram and WOW it is so delicious! I will for sure be making baked oats for a while!

Equipment

  • 1 Oven
  • 1 13x9 Oven Safe Dish

Ingredients
  

  • 2 cups Rolled Oats
  • 2 cups Unsweetened Vanilla Almond Milk
  • 1 large Peach - sliced
  • 1 cup Blueberries
  • 1/3 cup Sugar Free Maple Syrup
  • 1 Egg
  • 1 tsp Ground Cinnamon
  • 1 tsp Baking Powder
  • 1 tsp Vanilla Extract
  • 1/2 tsp Pink Himalayan Salt (any kind will do)

Instructions
 

  • Preheat oven to 350
  • Wash your fruit and add to your dish
  • Add your oats and dry ingredients
  • Add your egg, almond milk, vanilla extract and syrup
  • Mix all together well
  • Bake at 350 for 30 minutes

Notes

Total of 4 Weight Watchers Points for each serving.
