Blueberry Peach Baked Oats

I made baked oats last week and really wanted to make more this week. I had steered away from oatmeal once it was no longer 0 points for me but I started back up anyways and so glad I did!
Oatmeal offers several health benefits. It’s a good source of fiber which helps in digestion, lowers cholesterol and promotes feeling of fullness! Oats also provides sustained energy, vitamins, minerals and antioxidants that contribute to overall well-being. Need I say more?
Baked oats are one of the perfect breakfast meal preps. Delicious, filling and super easy!




Blueberry Peach Baked Oats
Equipment
- 1 Oven
- 1 13×9 Oven Safe Dish
Ingredients
- 2 cups Rolled Oats
- 2 cups Unsweetened Vanilla Almond Milk
- 1 large Peach – sliced
- 1 cup Blueberries
- 1/3 cup Sugar Free Maple Syrup
- 1 Egg
- 1 tsp Ground Cinnamon
- 1 tsp Baking Powder
- 1 tsp Vanilla Extract
- 1/2 tsp Pink Himalayan Salt (any kind will do)
Instructions
- Preheat oven to 350
- Wash your fruit and add to your dish
- Add your oats and dry ingredients
- Add your egg, almond milk, vanilla extract and syrup
- Mix all together well
- Bake at 350 for 30 minutes
