Bold & Flavorful Beef Enchilada Meal Prep Bowls (Meal Prep for 4 Lunches!)

Each bowl is layered with bold Mexican-inspired flavors and textures that hold up beautifully in the fridge. The seasoned lean ground beef is simmered in enchilada sauce for a rich, savory base. Then, it's paired with fluffy Spanish rice, roasted corn, and hearty black beans for balance and fiber. A sprinkle of shredded cheese and a side of light sour cream pull it all together. Best of all, this recipe reheats like a dream, making it a reliable and satisfying lunch you’ll actually look forward to all week.

Equipment

  • 1 Fry Pan
  • 1 Strainer
  • 4 Lunch Containers
  • 4 Condiment Containers

Ingredients
  

  • 1 lbs 96/4% Ground Beef
  • 3 tbsp Taco Seasoning (I use Dak's)
  • 1/2 cup Canned Enchilada Sauce
  • 1/2 cup Pico de gallo
  • 1 cup Black Beans
  • 2 cups Roasted Corn
  • 2 cups Spanish Rice
  • 1/2 cup Light Mexican Shredded Cheese
  • Light Sour Cream (optional)

Instructions
 

  • Cook up your ground beef with the taco seasoning and enchilada sauce.
  • While your meat is cooking, strain all liquid from your corn and beans (if canned) and set aside.
  • Make your pico de gallo. I bought mine pre-diced at the store!
  • Cook your spanish rice per directions. I used Uncle Bens microwaveable rice bag.
  • Once your meat and rice are done, assemble your bowls and top with shredded cheese!
  • I like sour cream with mine so I put those in equal amount condiment containers.
  • Reheat your bowls in the microwave for 2 minutes, mixing everything together half way through. Then stir in your sour cream or leave it on the side!
