- 1 lbs 96/4% Ground Beef
- 3 tbsp Taco Seasoning (I use Dak's)
- 1/2 cup Canned Enchilada Sauce
- 1/2 cup Pico de gallo
- 1 cup Black Beans
- 2 cups Roasted Corn
- 2 cups Spanish Rice
- 1/2 cup Light Mexican Shredded Cheese
- Light Sour Cream (optional)
Instructions
- Cook up your ground beef with the taco seasoning and enchilada sauce.
- While your meat is cooking, strain all liquid from your corn and beans (if canned) and set aside.
- Make your pico de gallo. I bought mine pre-diced at the store!
- Cook your spanish rice per directions. I used Uncle Bens microwaveable rice bag.
- Once your meat and rice are done, assemble your bowls and top with shredded cheese!
- I like sour cream with mine so I put those in equal amount condiment containers.
- Reheat your bowls in the microwave for 2 minutes, mixing everything together half way through. Then stir in your sour cream or leave it on the side!
