Wash your potato, rub with EVOO, stab several times with a fork and salt all around.
Air fry at 400 for 45 minutes, turning half way. (time may vary depending on your air fryer)
Caramelize your diced onion using only water. I set heat on high then once starts to brown I add water then turn down to med/high. Do this multiple times until you get them to your liking.
Once onions are done, turn down to medium and add corn to heat up.
Fry up your ground turkey in the pan, adding taco seasoning.
Drain your beans and rinse really well.
Add your beans in with your chicken to heat up.
Dice up your sweet red pepper.
Add your peppers, onions and corn to the chicken and beans, mix well.
Once your potato is done, cut open, fluff then add your goodies!
Top with shredded cheese, sour cream and warmed up queso.
