Chicken Taco Stuffed Potato

Stuffed potatoes are one of the easiest meals and most delicious that you could make! I made a weekly meal prep using two russet and two sweet potatoes and it was a huge hit!

This one is stuffed with some of my favorite ingredients for Taco Tuesday!


Chicken Taco Stuffed Potato

One of my favorite combos right here stuffed into a potato!
There are so many different ways to stuff a tater but this one is one of my favorites. This would be delicious as a sweet potato too!
I used ground chicken but you can also use shredded chicken or 96/4 ground beef.

Equipment

  • 1 Air Fryer
  • 1 Fry Pan

Ingredients
  

  • 1 large Russet Potato
  • 4 oz Isernios 96/4 Ground Chicken
  • 1/2 cup Roasted Corn
  • 1/3 cup Black Beans
  • 1/4 cup Diced Onion
  • 1 Diced Sweet Red Pepper
  • 1 tsp Daks Taco Seasoning
  • 1/8 cup Lite 3 Cheese Blend Shredded
  • 2 tbsp Tostitos Salsa Con Queso
  • 2 tbsp Light Sour Cream

Instructions
 

  • Wash your potato, rub with EVOO, stab several times with a fork and salt all around.
  • Air fry at 400 for 45 minutes, turning half way. (time may vary depending on your air fryer)
  • Caramelize your diced onion using only water. I set heat on high then once starts to brown I add water then turn down to med/high. Do this multiple times until you get them to your liking.
  • Once onions are done, turn down to medium and add corn to heat up.
  • Fry up your ground turkey in the pan, adding taco seasoning.
  • Drain your beans and rinse really well.
  • Add your beans in with your chicken to heat up.
  • Dice up your sweet red pepper.
  • Add your peppers, onions and corn to the chicken and beans, mix well.
  • Once your potato is done, cut open, fluff then add your goodies!
  • Top with shredded cheese, sour cream and warmed up queso.

Notes

Total of 13 Weight Watchers points.
Use fat free ground chicken breast to save 3 points if you wish!
