Cut up your chicken into bite size pieces and put into large mixing bowl
Add the white pepper, salt, eggs, and flour per the above list grouping. Let sit for 15 minutes
Zest your lemon. I ended up using two lemons.
Mix your flour and corn starch in a large mixing bowl and add your chicken pieces and coat.
Set your air fryer to 400
When the air fryer is ready, add your chicken pieces, not touching. Cook for 15 minutes, mixing a few times throughout the cooking process.
Start your rice cooker
When your first batch of chicken is done, empty into a clean big bowl. You will end up doing 3 batches of chicken depending on the size of your air fryer.
Add your sauce ingredients into the sauce pan. Mix corn starch with a little water. Bring sauce to a quick boil, whisk in your corn starch water mixture then turn down to a simmer, whisking periodically. It will thicken.
When all the chicken is done, pour your sauce over it and mix the sauce in with all your chicken pieces.
Assemble your lunch containers with rice and chicken. Garnish with lemon slices and sesame seeds.
