Chinese Lemon Chicken and Rice Bowls

These crispy air fried chicken pieces are coated in a delicious tangy, sweet and sour lemon sauce. It has the perfect combination of flavors. I served mine with jasmine rice but this chicken would be delicious with cauliflower rice, noodles and even zoodles!


Chinese Lemon Chicken

HOLY LEMONS!! This turned out incredibly delicious and I can’t believe it’s taken me so long to make it! 
Crispy chicken pieces coated in a sticky, tangy, sweet and slightly sour lemon sauce! SO GOOD!!

Equipment

  • 1 Air Fryer
  • 1 Rice/Pressure Cooker
  • 2 Large Mixing Bowls
  • 1 Sauce Pan
  • 4 Lunch Containers

Ingredients
  

  • 1-1/2 lbs Chicken Breasts
  • 4 cups White Rice
  • 1 tbsp White Pepper
  • 1 tbsp Salt
  • 1 Egg
  • 1/2 cup All-Purpose Flour

Lemon Sauce

  • 2-1/4 tbsp Lemon Zest
  • 2/3 cup Fresh Lemon Juice (used 3 large lemons)
  • 2 Tbsp Corn Starch
  • 3 tbsp Distilled White Vinegar
  • 3 tbsp Swerve Granulated Sugar Substitute
  • 1 cup Chicken Stock
  • 3 tbsp Wholesum Yum Sugar Free Honey

Instructions
 

  • Cut up your chicken into bite size pieces and put into large mixing bowl
  • Add the white pepper, salt, eggs, and flour per the above list grouping. Let sit for 15 minutes
  • Zest your lemon. I ended up using two lemons.
  • Mix your flour and corn starch in a large mixing bowl and add your chicken pieces and coat.
  • Set your air fryer to 400
  • When the air fryer is ready, add your chicken pieces, not touching. Cook for 15 minutes, mixing a few times throughout the cooking process.
  • Start your rice cooker
  • When your first batch of chicken is done, empty into a clean big bowl. You will end up doing 3 batches of chicken depending on the size of your air fryer.
  • Add your sauce ingredients into the sauce pan. Mix corn starch with a little water. Bring sauce to a quick boil, whisk in your corn starch water mixture then turn down to a simmer, whisking periodically. It will thicken.
  • When all the chicken is done, pour your sauce over it and mix the sauce in with all your chicken pieces.
  • Assemble your lunch containers with rice and chicken. Garnish with lemon slices and sesame seeds.
