Country Blackened Chicken Sweet Potato Breakfast Bowls
Start your mornings right with a burst of savory goodness! My breakfast bowls are loaded with blackened chicken, sweet potatoes, scrambled eggs, country gravy, a drizzle of maple syrup, and melted cheese. Perfect for meal prepping and keeping your mornings hassle-free.
Cut up your sweet potatoes and mix with EVOO and seasonings.
Air fry at 400 degrees for 25 minutes; tossing them multiple times while cooking.
Once your potatoes are done, set aside and add the chicken to your air fryer.
While your chicken is cooking, scramble your eggs.
Once everything is cooked, assemble your bowls with potatoes, eggs, chicken, country gravy, shredded cheese and maple syrup (either on the side or drizzle on top).
Heat in the microwave for 1 minute 45 seconds (depending on your microwave)
