Country Blackened Chicken Sweet Potato Breakfast Bowls
Equipment
- 1 Air Fryer
- 1 Fry Pan
- 4 Breakfast Containers
Ingredients
- 2 large Sweet Potatoes (diced)
- 12 oz Blackened Chicken Breast (I use Tyson frozen)
- 4 large Eggs
- 2/3 cup Egg Whites
- 1 cup Country Gravy
- 1/2 tbsp EEVO
- 1/2 cup Lite 3 cheese blend shredded
- 1/2 tbsp Daks Original Red & Blackened Seasonings
Instructions
- Cut up your sweet potatoes and mix with EVOO and seasonings.
- Air fry at 400 degrees for 25 minutes; tossing them multiple times while cooking.
- Once your potatoes are done, set aside and add the chicken to your air fryer.
- While your chicken is cooking, scramble your eggs.
- Once everything is cooked, assemble your bowls with potatoes, eggs, chicken, country gravy, shredded cheese and maple syrup (either on the side or drizzle on top).
- Heat in the microwave for 1 minute 45 seconds (depending on your microwave)
