HOLY PEACHES this is pure comfort in a bowl. The big winner on this one is the chutney which is TO DIE FOR! I usually love my pork with applesauce as it gives a slight sweetness to the pork. But WOW this chutney hands down blows applesauce out of the water! I will definitely be making this more.
Cook your Pork in the sous vide at 135 degrees for 3 hours (this is how we cook it, you cook any way you wish)
Caramelize your chopped onions in a small fry pan. I fry them on a high heat, once start to brown add a little bit of water, stir and repeat that process until it is all golden brown.
Add to the browned onions your chutney ingredients and simmer
Make your stuffing and potatoes per directions
Once the pork is done, we put a quick seer and then cut into bite size pieces
