Ingredients
  

  • 3 Small 6-1/2" Corn Tortillas
  • 1 cup Roasted Corn
  • 3 large Eggs
  • 2 tbsp 3 Cheese Blend Shredded
  • 1/2 tbsp Light Mayo
  • 1/2 tbsp Light Sour Cream
  • 1 tsp Lime Juice
  • 2 tsp Elote Seasoning
  • 1/4 oz Queso Fresco
  • Cilantro

Instructions
 

  • Heat up your corn any way you choose.
  • In a small bowl, mix your corn, lime juice, seasoning, mayo and sour cream. Set aside.
  • Scramble your eggs with the shredded cheese.
  • Warm up your tortillas and set on a plate or in a bowl.
  • Layer starting with your scrambled eggs, corn mix, queso fresco, and cilantro. ENJOY!
