Ingredients
- 3 Small 6-1/2" Corn Tortillas
- 1 cup Roasted Corn
- 3 large Eggs
- 2 tbsp 3 Cheese Blend Shredded
- 1/2 tbsp Light Mayo
- 1/2 tbsp Light Sour Cream
- 1 tsp Lime Juice
- 2 tsp Elote Seasoning
- 1/4 oz Queso Fresco
- Cilantro
Instructions
- Heat up your corn any way you choose.
- In a small bowl, mix your corn, lime juice, seasoning, mayo and sour cream. Set aside.
