This delicious and colorful salad is one of my favorites! The combination of flavors are incredible and it gives me all the Fall feels. The best part if the entire salad including the dressing is ONLY 7 points!!
1/2cupSliced Beets (uncooked unless you prefer cooked)
2tbspCrushed Walnuts
21gramsReduced Sugar Dried Cranberries
1Delicata Squash
2ozFat Free Feta Cheese Crumbled
7ozChicken Breast
Light Honey Mustard Dressing
1/4cup0% Plain Greek Yogurt
1-1/4tbspHoney Alternative (I love Wholesome Yum)
1/2tbspApple Cider Vinegar
1/2tbspLemon Juice
1/4tbspOlive Oil
Instructions
Cut your delicata squash in half long ways, scoop out the seeds, cut into fry shapes and spray with avocado or olive oil spray. Season with your choice of seasoning. I use salt and pepper.
Air fry face down at 400 for 25 minutes; flipping half way through
While your squash cooks, cut up all your veggies
Whisk your dressing ingredients and set aside
Once your squash is cooked, assemble your salad bowl and drizzle your dressing on top!
