Fall Harvest Salad
The Fall season is my favorite time of year! The beautiful leaves changing color, the crisp fresh air and the delicious seasonal produce!
I love delicata squash and eat it almost daily during fall and winter. Adding it to a salad is so delicious and really brings out the healthy produce flavors you can enjoy the last months of the year!
Fall Harvest Salad
This delicious and colorful salad is one of my favorites! The combination of flavors are incredible and it gives me all the Fall feels. The best part if the entire salad including the dressing is ONLY 7 points!!
Equipment
- 1 Air Fryer
Ingredients
- 2 cups Chopped Romaine
- 1 Delicata Squash
- 1/2 Apple (I love HoneyCrisp)
- 1/2 cup Sliced Beets (uncooked unless you prefer cooked)
- 2 tbsp Crushed Walnuts
- 21 grams Reduced Sugar Dried Cranberries
- 1 Delicata Squash
- 2 oz Fat Free Feta Cheese Crumbled
- 7 oz Chicken Breast
Light Honey Mustard Dressing
- 1/4 cup 0% Plain Greek Yogurt
- 1-1/4 tbsp Honey Alternative (I love Wholesome Yum)
- 1/2 tbsp Apple Cider Vinegar
- 1/2 tbsp Lemon Juice
- 1/4 tbsp Olive Oil
Instructions
- Cut your delicata squash in half long ways, scoop out the seeds, cut into fry shapes and spray with avocado or olive oil spray. Season with your choice of seasoning. I use salt and pepper.
- Air fry face down at 400 for 25 minutes; flipping half way through
- While your squash cooks, cut up all your veggies
- Whisk your dressing ingredients and set aside
- Once your squash is cooked, assemble your salad bowl and drizzle your dressing on top!
