French Toast Muffins
ONLY 1 point each for these delicious french toast muffins! I lightened them up, including the bread!
I drizzled warm sugar free maple syrup and added powdered confectioners sugar on top!

Unsweetened Vanilla Almond Milk

Vanilla Extract

Ground Cinnamon

Sugar Free Maple Syrup

Swerve Confectioners Sugar
Instructions
Preheat oven to 350
In a mixing bowl, whisk eggs, cinnamon, vanilla extract and almond milk
Cut up your bread in small pieces and place in with your egg mixture and stir so your bread gets completely coated. Set aside for 10 minutes
Once 10 minutes has passed, mix your bread again
Spray your muffin tin with non-stick spray if you haven't already
Evenly place your bread mix into 10 muffin cups. If you want more in each tin, go for it!
Bake for 25 minutes
Drizzle SF maple syrup and add confectioners sugar. ENJOY!
