French Toast Muffins

WOW these 1 point french toast muffins are incredible and so easy to make! You can add fruit, walnuts or even extra cinnamon and sugar!


French Toast Muffins

ONLY 1 point each for these delicious french toast muffins! I lightened them up, including the bread!
I drizzled warm sugar free maple syrup and added powdered confectioners sugar on top!

Equipment

  • 1 Oven
  • 1 Muffin Tin (sprayed)
  • 1 Mixing Bowl

Ingredients
  

  • 10 slices Light Bread (I used Sara Lee Delightful White Bread)
  • 4 large Eggs
  • 2/3 cup Unsweetened Vanilla Almond Milk
  • 2 tsp Vanilla Extract
  • 1 tsp Ground Cinnamon
  • 5 tsp Sugar Free Maple Syrup
  • 5 tsp Swerve Confectioners Sugar

Instructions
 

  • Preheat oven to 350
  • In a mixing bowl, whisk eggs, cinnamon, vanilla extract and almond milk
  • Cut up your bread in small pieces and place in with your egg mixture and stir so your bread gets completely coated. Set aside for 10 minutes
  • Once 10 minutes has passed, mix your bread again
  • Spray your muffin tin with non-stick spray if you haven't already
  • Evenly place your bread mix into 10 muffin cups. If you want more in each tin, go for it!
  • Bake for 25 minutes
  • Drizzle SF maple syrup and add confectioners sugar. ENJOY!
