Equipment

  • 1 Outdoor Grill
  • Grill Utensils
  • 1 Stock Pot
  • 2 Large Cutting Boards
  • 1 Small Mixing Bowl
  • 1 Sharp Knife
  • 1 Microwave

Ingredients
  

  • 1 large Fresh Live Lobster
  • 2 tsp Olive Oil
  • Salt & Pepper

Chimichurri

  • 1/2 cup Parsley, finely chopped
  • 1/4 cup Cilantro, finely chopped
  • 2 Garlic Cloves, minced
  • 2 tsp Olive Oil
  • 1 tbsp Lime Juice
  • 1 tsp Red Pepper Flakes

Instructions
 

  • Chop your parsley and cilantro then mince your garlic. Put in your mixing bowl.
  • Add to your mixing bowl the olive oil, lime juice, red wine vinegar and red pepper flakes. Stir well and set aside.
  • Preheat your grill.
  • Boil water in your stock pot.
  • Grab your live lobster with your long tongs and place into the boiling water head first. This is the most humane way.
  • Boil your lobster for 4 minutes.
  • Once your lobster is bright red, use your long tongs and remove from the water and place on large cutting board.
  • Using a sharp knife, split your lobster in half lengthwise.
  • Brush the meat with olive oil and season with salt and pepper.
  • Cook each side to temperature which should be 140 degrees.
  • Once they are almost done, have the meat facing up and add your chimichurri mix. Close grill lid and let sit for 1 minute.
  • Remove and plate! I put my lobster on top of a bed of cilantro lime rice and roasted corn. ENJOY!
