Healthy BBQ Salmon with Mango, Pineapple and Blueberry Salsa

There’s something about BBQ salmon that feels both comforting and fresh, especially when paired with tropical fruit. The smoky glaze from the Kinder’s BBQ sauce brings out the richness of the sockeye salmon, while the mango, pineapple, and blueberry salsa cuts through with bright, juicy flavor. Served over rice, this dish is a perfect balance of sweet, savory, and tangy — and it’s ready in under 20 minutes.

Equipment

  • 1 Air Fryer
  • 1 Microwave or Rice Cooker
  • 1 Small Bowl for salsa
  • 1 Cutting Board
  • 1 Sharp Knife
  • Measuring Cups
  • Measuring Spoons

Ingredients
  

  • 6 oz Sockeye Salmon Filet
  • 2/3 cup Rice
  • 2 tbsp Your favorite BBQ sauce

Tropical Salsa

  • 1/2 cup Diced Mango
  • 1/2 cup Diced Pineapple
  • 1/4 cup Fresh Blueberries
  • 2 tbsp Red Onion - diced
  • 2 tbsp Chopped Cilantro
  • Juice of half lime
  • 1/2 tsp Honey

Instructions
 

  • Cut up your salsa ingredients, mix well in your bowl and set aside
  • Rinse your fresh salmon with cold water then pat dry
  • Brush your salmon with BBQ sauce
  • Air fry at 400 for 12 minutes; skin down - no need to flip half way unless you want crispy skin! All air fryers differ, make sure your salmon is at 145
  • While your salmon cooks, heat up your rice. If you are using a rice cooker, start that before your salmon
  • If you want, add more BBQ sauce two minutes before the salmon is done!
  • When everything is ready, add your rice, salmon and salsa to your bowl, add crushed pistachios and ENJOY!
