This is such a delicious bowl! I love pulled pork with a little BBQ sauce along with cornbread. There's just something comforting about it together. I had the cornbread mix in my pantry since Christmas time so thought I should make it! There are so many things you can make it with.
Season the pork, pour a can of beer over top into a pressure cooker and push the meat button. You can buy already made shredded pork to make this go faster and easier.
Preheat oven to 400 (follow cornbread mix instructions)
When your meat has about 20 minutes left, stick the cornbread mix in.
When the pork is done, shred your portion
Assemble your bowl starting with cornbread, then meat, coleslaw, corn and pickles

Total for the above portions is 16 Weight Watchers points. You can plan accordingly with this one with your points throughout the day or cut out some of your meat if needed. Me...I won't go with less meat. HA!
