Pulled Pork and Cornbread Bowl
Pulled shredded pork is delicious and there are many ways to make it. We buy boneless pork rib shoulder at Costco, divide them up into portions, season them, vacuum seal and freeze. It’s super convenient to pull them out the night before to thaw for the next nights dinner.
We put the seasoned pork into our pressure cooker, pour a beer over and push the meat button. They cook up so tender! I am not a beer fan but trust me on this one, it turns out AMAZING!
Pulled Pork and Cornbread Bowl
This is such a delicious bowl! I love pulled pork with a little BBQ sauce along with cornbread. There's just something comforting about it together. I had the cornbread mix in my pantry since Christmas time so thought I should make it! There are so many things you can make it with.
Equipment
- 1 Pressure Cooker
- 1 Oven
- 1 Microwave
Ingredients
- 4 oz Pulled Shredded Pork
- 1/8 cup Cornbread Mix
- 2/3 cup Corn
- 1 cup Tri-Color Cole Slaw mix
- 1 tbsp GHughes Coleslaw Dressing
- 2 tbsp GHughes BBQ Sauce
- 1/8 tsp Sugar Free Honey
- 6 Dill Pickles
Instructions
- Season the pork, pour a can of beer over top into a pressure cooker and push the meat button. You can buy already made shredded pork to make this go faster and easier.
- Preheat oven to 400 (follow cornbread mix instructions)
- When your meat has about 20 minutes left, stick the cornbread mix in.
- When the pork is done, shred your portion
- Assemble your bowl starting with cornbread, then meat, coleslaw, corn and pickles

Total for the above portions is 16 Weight Watchers points.
You can plan accordingly with this one with your points throughout the day or cut out some of your meat if needed. Me…I won’t go with less meat. HA!
