Strawberry Oatmeal Muffins

Yep Iโ€™m obsessed with blended baked oats and not upset about it. ๐Ÿคฃ I used my same recipe that I make in the ramekins but decided to bake them in a muffin tin. They turned out so cute and delicious! ๐Ÿ’— Two points per โ€œmuffinโ€.
I used Simply Delish Keto Strawberry Pudding Mix in these to give them an amazing strawberry flavor!๐Ÿ‘Œ๐Ÿผ You can use any sugar free pudding mix brand you wish.

Equipment

  • 1 Oven
  • 1 Blender (I have a Ninja)
  • 1 Oven
  • 1 10-12 Tin Muffin Baking Tin
  • 1 Colling Rack

Ingredients
  

  • 2 cups Old Fashioned Oats
  • 1/2 cup Unsweetened Vanilla Almond Milk
  • 4 large Eggs
  • 1 box Strawberry Simply Delish Pudding Mix (any sugar free brand)
  • 1 tsp Baking Powder
  • 2 large Bananas
  • 1 tsp Vanilla Extract
  • 1 tsp Butter Extract
  • 1 cup Strawberries (diced)

Instructions
 

  • Preheat oven to 350
  • Blend all ingredients except for your diced strawberries in your blender
  • Then fold in most of your strawberries (leave some for topping)
  • Pour evenly into 10 tin cups. (you can use all 12 if you wish)
  • Top each with more strawberries and pop into the oven
  • Bake for 25 minutes (may need more depending on your oven)
  • Let cool for 5 minutes in baking tin then transfer to a cooling rack until fully cooled. I store mine in the fridge up to 6 days!

Each oat muffin is 2 Weight Watchers points!
