Strawberry Muffin Blended Baked Oats
If you haven’t seen what all the craze if about on TikTok with these blended baked oats then YOU MUST! I don’t even have TikTok but have seen the videos on Instagram.
I started making these a few months back and haven’t stopped. I am completely obsessed with how simply and delicious these are. There are so many different varieties you can make that you will never get tired of them.
For me, pudding mix has been a huge must in these baked oats and really brings out the flavor. This is the first time I made them in a muffin form. Same ingredients but super cute!





Strawberry Muffin Blended Baked Oats
Yep I’m obsessed with blended baked oats and not upset about it. 🤣 I used my same recipe that I make in the ramekins but decided to bake them in a muffin tin. They turned out so cute and delicious! 💗 Two points per “muffin”.I used Simply Delish Keto Strawberry Pudding Mix in these to give them an amazing strawberry flavor!👌🏼 You can use any sugar free pudding mix brand you wish.
Equipment
- 1 Oven
- 1 Blender (I have a Ninja)
- 1 Oven
- 1 10-12 Tin Muffin Baking Tin
- 1 Colling Rack
Ingredients
- 2 cups Old Fashioned Oats
- 1/2 cup Unsweetened Vanilla Almond Milk
- 4 large Eggs
- 1 box Strawberry Simply Delish Pudding Mix (any sugar free brand)
- 1 tsp Baking Powder
- 2 large Bananas
- 1 tsp Vanilla Extract
- 1 tsp Butter Extract
- 1 cup Strawberries (diced)
Instructions
- Preheat oven to 350
- Blend all ingredients except for your diced strawberries in your blender
- Then fold in most of your strawberries (leave some for topping)
- Pour evenly into 10 tin cups. (you can use all 12 if you wish)
- Top each with more strawberries and pop into the oven
- Bake for 25 minutes (may need more depending on your oven)
- Let cool for 5 minutes in baking tin then transfer to a cooling rack until fully cooled. I store mine in the fridge up to 6 days!
