Chicken Queso Crunchwrap

I always love a deliciously filled crunchwrap and this one is amazing! It may be a hot mess but trust me it was so well worth it!

The yummy golden brown crunch on the Cut da Carb wraps always turns out perfect. Some enjoy using oil which really makes it crispy and yummy but also adds calories and points. Using I Can’t Believe it’s not Butter spray is a great solution to this!

Canned shredded chicken doesn’t get enough kudos. There are plenty of recipes you can incorporate the chicken in and it’s easily grabbable from your pantry! You can always have it on hand in a can.


Chicken Queso Crunchwrap

These hot mess crunchwraps are AMAZING! I love white queso and can just scoop it out from a bowl so thought I would mix it with chicken and roasted corn to make a delicious crunchwrap. SO GOOD!

Equipment

  • 1 Fry Pan
  • 1 Mixing Bowl

Ingredients
  

  • 2 Cut da Carb Flatbread
  • 3/8 cup Lite 3 Cheese Blend Shredded
  • 4 tbso Queso Blanco Dip (Tositos)
  • 6 oz Shredded Canned Chicken
  • 2/3 cup Roasted Corn
  • 1/4 cup Chopped Green Onions

Instructions
 

  • Warm up queso just so it is no longer cold
  • Empty can chicken, corn and green onions into a mixing bowl; leaving some green onions aside for garnish
  • Stir your queso in with your chicken/corn mix
  • Lay out your flatbread
  • Layer the middle of your flatbread with your mix starting and ending with ½ each of shredded cheese. This helps melt the cheese!
  • Fold up like a present starting with the bottom of your flatbread, then the bottom left corner, side…etc. *See my Instagram Story Highlight for a how-to video!*
  • Spray your folded side down with ICBINB and put in your frypan. Give it a couple minutes on level 7 (med/high) so it turns golden and crispy.
  • Spray the top of your crunchwrap with ICBINB and flip.
  • Once that side is golden, spray the sides and use your spatula to hold one side up and the your ICBINB bottle for the other side. Keep turning the wrap all around so it gets the sides golden.
  • When done, place on a mat and cut in half then ENJOY!

Notes

Total Weight Watchers points for entire plate is 9. For half of the plate which is one crunchwrap is 5 points!
