Spicy Teriyaki Chicken & Rice Bowls

Sweet and Spicy is one of my most favorite combos! Actually, it just may be my MOST favorite! Marinating meat is so important! It tenderizes, adds moisture and the meat absorbs the intense flavors of your marinade.

These bowl are delish! After I took my pictures, I cut up my chicken into pieces so that when I reheat at work, they are already ready for me. I will heat up for a minute, stir and add the sauce and heat another minute.


Spicy Teriyaki Chicken Bowls

This spicy teriyaki sauce turned out delicious! You know me, I love sweet and spicy as they just belong together!
As you can see, a lot of my meal prep dishes include pineapple and rice. HA! They are both delicious and very low on calories. There are so many different things you can make with both of them!

Equipment

  • 1 Pressure Cooker/Rice Cooker
  • 1 Air Fryer
  • 1 Small Mixing Bowl
  • 1 Gallon size bag or container for marinating
  • 4 Glass Storage Containers
  • 4 Condiment Containers

Ingredients
  

  • 4 Chicken Breasts
  • 4 cups White Rice
  • 4 cups Shredded Cabbage/Carrots
  • 2 cups Pineapple Tidbits

Spicy Teriyaki Sauce

  • 1/2 cup Lite Soy Sauce
  • 4 tbsp Swerve Brown Sugar
  • 2 tbsp Honey
  • 1 tbsp Paprika
  • 2 tsp Garlic
  • 2 tsp Ginger
  • 2 tsp Garlic Powder
  • 2 tsp Salt
  • 4 tbsp Red Pepper Chili Flakes

Instructions
 

  • Mix your sauce ingredients then pour some into your condiment containers and the rest over your chicken breasts and refrigerate for a couple hours.
  • Once your chicken is done marinating, start your big batch of rice in the pressure/rice cooker.
  • Set your air fryer at 400 degrees then put your 4 pieces in. You may have to do this in two batches depending on the size of your chicken and fryer. When you flip your chicken half way, rub some sauce on them.
  • Once your chicken is done, slice and set aside.
  • When your rice is done, measure out into each of your bowls then add the rest!
  • Top with black/white sesame seeds.
