Tangerine Chicken and Rice Bowls

Say hello to my Tangerine Chicken and Rice Bowls! 🌟I 've taken a classic favorite and given it a healthy twist. No breading, just tender, juicy chicken cooked to perfection and coated in a tangy tangerine glaze. Paired with fluffy rice and fresh broccoli, this meal is as satisfying as it is wholesome. 🥳

Equipment

  • 1 Air Fryer
  • 1 Juicer (I used a hand juicer)
  • 1 Zester (you will be zesting a tangerine)
  • 1 Large Mixing Bowl
  • 1 Sauce Pan
  • 1 Stove Top
  • 1 Microwave (if cooking rice this way)
  • 1 Rice Cooker (if cooking rice this way)
  • 4 Lunch Containers

Ingredients
  

  • 1-1/2 lbs Chicken Breast
  • 2 cups White Rice (any rice will work)
  • 2 cups Broccoli Florets

Tangerine Sauce/Glaze

  • 8 small Tangerines (mandarins will work)
  • 4 tbsp Low Sodium Soy Sauce
  • 2 tbsp Rice Wine Vinegar
  • 4 tbsp Honey (I used Wholesome Yum Alternative Keto)
  • 2 tbsp Hoisin Sauce
  • 2 tsp Ground Ginger
  • 2 tsp Garlic Minced
  • 4 tbsp Sugar Free Tangerine or Orange Marmalade
  • 2 tsp Cornstarch

Instructions
 

  • Dice up your chicken breast into bite size pieces.
  • Air fry your chicken at 400 degrees for 14 minutes. You will want to do this in two batches and make sure you are mixing the chicken pieces a couple times during it's cooking cycle.
  • This is where one of your large bowls will come in handy, putting your cooked chicken into while the 2nd batch cooks.
  • Cook your rice if you are using a rice cooker. If microwaving, you can wait a little while for this step.
  • While your chicken cooks, squeeze your 8 tangerines to make 1 cup of juice.
  • Combine your juice and sauce ingredients (except cornstarch) into your sauce pan.
  • Zest one of your tangerines and add to your sauce pan.
  • Mix your cornstarch with a little water until dissolved.
  • Bring your sauce to a boil and whisk your cornstarch/water mix. Keep whisking until it starts to thicken then turn down to a simmer and leave alone.
  • Cook your rice if it's microwavable then set aside.
  • Once your chicken is all done, pour your sauce into your chicken bowl and mix well.
  • Boil or steam your broccoli to your liking.
  • Assemble your bowls and garnish with tangerines, sesame seeds and chili flakes for a little kick. All of this is optional!
