Southwest Chicken Salad Bowls

This is a BIG salad and my FAV! You can use so many different veggies to get your health benefits and as fillers to keep you from snacking the rest of the day!

The big winner on these is the Healthy Buffalo Ranch Dressing from Food By The Gram. For an entire 1/3 cup is ONLY 1 point! Nope, I did not mistype that my friends…ONE point! It is so good too..total game changer!


Southwest Chicken Salad Bowls

This is one of my all time favorite salad meal prep bowls! This keeps me full for quite some time. Yes, there is lettuce in there at the bottom but because I like to eat a lot, I chop up extra romaine and stick in a gallon size bag.

Equipment

  • 1 Air Fryer
  • 1 Small Mixing Bowl
  • 4 Glass Storage Containers
  • 4 Condiment Containers

Ingredients
  

  • 6 cups Chopped Romaine Lettuce
  • 24 oz Tyson Blackened Chicken
  • 2 cups Canned Black Beans
  • 2 cups Roasted Corn (canned or frozen)
  • 2 cups Diced Tomatoes
  • 1-1/3 cup Diced Onion
  • 40 Good Thin Corn Crackers
  • 1 cup Fresh Cilantro
  • 1 tbsp Cotija Cheese

Instructions
 

  • Set your air fryer at 400 degrees
  • Add your chicken to the fryer for 10 minutes.
  • While your chicken cooks, cut up all your veggies.
  • Mix up your dressing ingredients then divide up into your condiment containers.
  • Warm up your corn if you are using frozen. If canned, no need.
  • Drain and rinse your black beans then set aside.
  • When your chicken is done, cut into bite size pieces.
  • Assemble your bowls and top with cotija cheese.
  • Put your extra romaine into a gallon size and your crackers into individual snack size bags.
