Bacon and Cheese Hashbrown Waffles

I love waffles but also enjoy changing things up and making new yummy recipes! These turned out AMAZING and super easy! As you all know, easy is how I prefer it.

Crispy hashbrowns and bacon belong together no matter how you make it. THESE are the perfect breakfast combo! These are a delicious savory meal no matter the time of day! You can make these low carb by using shredded rutabaga or cauliflower, pork rinds breading and full fat cheese.

I used my DASH waffle maker which is so cute and mess free. If you don’t have one I highly recommend!


Bacon and Cheese Hashbrown Waffles

HOLY WAFFLES!! If you haven't had these yet then what are you waiting for?! They are beyond delicious and if I could, I'd have them every day!
Don't get me wrong, I love the good ol' standard waffles but changing things up with these bad boys is where its at!
I used my DASH waffle maker but these can be made in any kind of waffle maker!

Cook Time 30 minutes

Equipment

  • 1 Waffle Maker
  • 1 Oven
  • 1 Large Mixing Bowl
  • 1 Cookie Sheet

Ingredients
  

  • 4 cups Frozen Ore Ida Hashbrowns THAWED
  • 3 Eggs
  • 1/2 cup Bacon Pieces/Bits (I love Kirkland brand)
  • 1/2 cup Lite 3 Cheese Blend Shredded
  • 2 tbsp Bread Crumbs

Instructions
 

  • Preheat your waffle maker
  • Preheat your oven to warm
  • Whisk your eggs in your large mixing bowl
  • Add the rest of your ingredients to your bowl and mix well
  • Spray your waffle maker with non-stick spray
  • Scoop out your mix using a heaping 1/3 measuring cup
  • Flatten it down in your waffle maker by closing
  • I put my cooked waffles onto a cookie sheet and leave in the warm oven while the rest cook

Notes

Total of 6 Weight Watchers points for 2 waffles. This makes 8 waffles!
