Country Chicken Breakfast Meal Prep

I guess you could call breakfast at lunch BRUNCH! I am all about breakfast and I believe I got that love for breakfast from my mom and grandma. There is just something comforting about going out for a delicious big breakfast to start off the day.

I figured that I would switch it up and make my weekly lunch meal prep as BREAKFAST! This is a win win my friends and I’m excited!

Your first layer will start with the hashbrowns. Be sure your bowl is on the scale to weigh out your ingredients!

Next is to layer with your delicious fluffy scrambled eggs. I like to mix Dak’s Original Red with my eggs to kick them up a notch!

Then your next is the blackened chicken layer topped with cheese!

Then your final of course is the gravy and a dusting of Original Red seasoning. YUM!


Country Chicken Breakfast Meal Prep

I decided to switch things up this week for my lunches and meal prepped breakfasts for lunch! I guess you could call that brunch but I'm going to call it BRILLIANT! ha!
I make these for breakfast probably once a week and they keep me full longer than any other breakfast I make. That is a big win for me!

Equipment

  • 1 Air Fryer
  • 2 Fry Pan
  • 4 Glass Storage Containers
  • 4 Condiment Containers

Ingredients
  

  • 20 oz Blackened Chicken
  • 8 Eggs
  • 3 cups Ore Ida Shredded Hashbrowns (135g each)
  • 1/2 cup Country Sausage Gravy (Libby's)
  • 1/2 cup Fat Free Shredded Cheddar
  • 4 tsp Dak's Original Red (optional)
  • 3/4 cup Sugar Free Maple Syrup (optional)

Instructions
 

  • Pan fry your hashbrowns to get them to crisp up
  • While your hashbrowns are cooking, air fry your chicken at 400 degrees for 10 minutes.
  • Scramble up your eggs
  • Once everything is cooked, take each bowl and place on your scale. Weigh out the potatoes, then your eggs, chicken, shredded cheese and top with gravy. Finish them off with a dusting of Dak's Original Red for a delicious flavor add!
  • I enjoy a drizzle of sugar free maple syrup so I poured that into each of my condiment containers. SO GOOD!
