Bacon, Egg and Cheese Breakfast Sandwich
Meal prepping is such an important part of being successful in weight loss. Not only meal prep your lunches but meal prep your breakfasts too! That way, it is simple to just quickly grab your meal, stick into the microwave and you have your food in a matter of minutes.
We all get busy and don’t always make time for ourselves. THIS is one of those ways to take time for YOU and take care of YOU.
I love me some bacon! Instead of buying the thick cut hickory smoked stuff, just go for the center cut which is equally as delicious and waaaay lower in points and calories!
Wrap these bad boys up in foil or bag them and stick in the fridge for the week. I take them out, unwrap and place on a paper towel. Microwave for 1 minute, flip and heat for another 30 seconds.





Bacon, Egg and Cheese Breakfast Sandwich
Equipment
- 1 Oven
Ingredients
- 1-1/2 Eggs
- 1 slice Velveeta Cheese
- 2-1/2 Center Cut Bacon Slices
- 1 English Muffin
Instructions
- Preheat oven to 400
- Lay out your bacon on a baking sheet or bacon rack
- Whisk your eggs in a bowl then pour into 4 holes of a donut baking pan
- Stick your bacon in the oven for 13 minutes (give or take a few depending on your oven)
- Stick your eggs in for 7 minutes (give or take a few depending on your oven)
- Slice open your english muffins and lay out
- Once bacon and eggs are done, layer your sandwiches with egg, bacon then a slice of cheese. YUM!
