Creamy French Onion Chicken Pasta

I love french onion soup so I turned that into a pasta with chicken! OMG it is so delish I can hardly contain myself!

I wanted to see what all the hype was about with the Al Dente Carba-Nada pasta so I got some bags from Amazon. WOW it seems too good to be true! It is delicious and I can’t believe it took me this long to get it.

I am not a huge pasta eater but this I can definitely have on repeat because it is THAT good!

Creamy French Onion Chicken Pasta

This meal prep turned out incredibly delicious! Yes, I probably say that about all my lunch meal preps. HA! This was quick and easy with the best part being that it is only 9 points for each lunch!
To make this creamy without all the points, I used light Laughing Cow cheese wedges and almond milk.

Equipment

  • 1 Air Fryer
  • 1 Pasta Stove Pan/Pot
  • 1 Deep Fry Pan
  • 1 Ninja/Blender

Ingredients

  • 16 oz Al Dente Carba-Nada Fusilli Pasta (Dry)
  • 1 cup Diced Onion
  • 28 oz Chicken Breast
  • 2 tbsp Italian Seasoning/Paprika mix
  • 1/3 cup Light Mozzarella shredded
  • 1/8 cup Freshly grated parmesan
  • 1 tbsp Dried Italian Seasoning

Creamy French Onion Sauce

  • 4 tbsp Lipton French Onion Dip Mix
  • 1 cup Reduced Sodium Beef Broth
  • 4 Laughing Cow Light Swiss Cheese Wedges
  • 1/2 cup Unsweetened Vanilla Almond Milk (can be plain)
  • 2 tsp Onion Powder
  • 2 tsp Paprika

Instructions

  • Season chicken breasts with italian seasoning and paprika then air fry at 400 for 20 minutes (give or take depending on your air fryer)
  • Boil your pasta
  • Caramelize your diced onions in a small fry pan. I fry them on a high heat, once start to brown add a little bit of water, stir and repeat that process until it is all golden brown. Set aside in a bowl/plate
  • Mix your sauce ingredients
  • Once your pasta is done, pour it into the fry pan you cooked your onions in
  • Add onions (leaving a little amount in your bowl) to the pasta then your sauce and mix. Let simmer for just 5 minutes then add mozzarella and stir to melt your cheese.
  • Once your chicken is done, cut into bite size pieces
  • Add your chicken to your lunch containers, top with the rest of your onions divided out
  • Add your pasta to your dishes and top with grated parmesan and dried italian seasoning
