Crispy Nashville Hot Chicken n’ Mac & Cheese

Oh boy was it hard to not eat all this up before putting them into my containers! This is one of my favorite kind of chicken and I could eat it every day!

This macaroni and cheese is delicious and SO easy to make! Just one pot and you have what you need! Only takes about 15 minutes and you have either lunches for the week or a yummy family meal!

Crispy Nashville Hot Chicken n’ Mac & Cheese

WOWZERS these are freak'n AMAZING and I cannot wait until my lunches at work this week!
I love sweet with a kick and these definitely have a kick. You can let up on the amount of spicy and have this more sweet but why? HA!
I could eat anything that is in this delicious sauce.

Equipment

  • 1 Air Fryer
  • 1 Small Sauce Pan
  • 1 Large Pasta Pan
  • 2 Large Mixing Bowls
  • 4 Glass Lunch Storage Containers

Ingredients
  

  • 4-5 Large Chicken Breasts
  • 2 Large Eggs

Brine

  • 1 cup Hamburger Dill Pickle Juice
  • 1 tbsp Franks Buffalo Wing Sauce
  • 1/2 cup Unsweetened Vanilla Almond Milk

Breading

  • 1/4 cup All Purpose Flour
  • 1-1/2 cup Oat Flour
  • 1 tsp Black Pepper

Nashville Hot Sauce

  • 4 tbsp Honey Alternative (Wholesome Yum)
  • 4 tbsp ICBINB Light Butter Spread
  • 1-1/2 tsp Paprika
  • 1/2 tsp Chili Powder
  • 3 tbsp Swerve Brown Sugar
  • 1 tsp Cumin
  • 1 tsp Dak's Blackened Seasoning

Mac & Cheese

  • 12 oz Al Dente Carba-Nada Pasta
  • 2 cups Unsweetened Vanilla Almond Milk
  • 1-1/2 cups Water
  • 1/2 tsp Paprika
  • 1/2 tsp Onion Powder
  • 1/2 tsp Garlic Powder
  • 1-1/2 tsp Yellow Mustard
  • 6 Slices Velveeta Slices
  • 3 oz Light Shredded 3 Cheese Blend (Trader Joes)

Instructions
 

  • Cut your chicken breast into chunks and put in a large mixing bowl
  • Pour the wing sauce, pickle juice and almond milk in with your chicken, mix and set aside for 30 minute to 2 hours
  • Mix your breading ingredients together in a large Ziplock back
  • Whisk your eggs in a large flattened dish
  • Once you have marinated your chicken, take them in about 3 batches and put into the flour mix, then egg, then flour mix again
  • Air fry at 400 each batch for 18 minutes, mixing and flipping the chicken bites several times throughout them cooking
  • In your large pasta pan, pour in your almond milk, water and add pasta
  • Boil until liquid is almost gone
  • Add the seasoning, mustard and cheeses
  • Stir up to melt the cheese. You may have to add a little almond milk depending on the consistency you want
  • Mix up all your sauce ingredients in a small sauce pan
  • Once all your chicken is cooked, mix the sauce in until all pieces are covered with sauce
  • Divide up everything within your 4 glass lunch containers
